We've been slow in keeping this Fresco Blog up to date! With Facebook and now Twitter (of questionable value) and half a dozen other potential social networking sites it seems there's not enough time to post everything everywhere. Today we roasted a batch of cocoa, winnowed a different batch, molded a 3rd batch and wrapped a 4th batch - all Papua New Guinea with different roast levels! Too fun!

We keep asking ourselves that question. We've jumped on the Twitter band waggon. You can follow us at @FrescoChocolat if you're into the twitter scene. You're reading this post on our blog so you already know about this.
Only time will tell which of these social networks will add value to the reader and help our businss grow. For now, we'll keep up with the various media the best we can. Fresco will be exhibiting our award winning Madagascar 214 chocolate at the San Francisco Ferry Building Marketplace on Saturday, Jan 14, from 10 am - 2 pm. We wll also be attendign the Good Food Awards Ceremony and Reception Friday, Jan 13. Hope to meet up with some of you.

I'm a volunteer leader for our local Boy Scout troop. The scouts in our troop know that when they earn the Eagle Scout award they also get a 10 pound chocolate bar. This one is 70% dark chocolate from Venezuelan Cocoa.
I have one chocolate mold that will make a bar this size. It doesn't get used very often but when it does the results are impressive.
Congratulations! A lot of hard work and dedication goes into earning the Eagle Scout rank. Mom and Dad play a big part in this accomplishment so good thing there is enough to share.

Many people have asked for more of our 74% Ghana 211 bar so we're making a fresh batch. This Ghana cocoa is organic and fair trade. I roasted the cocoa tonight and had forgotten how really good these roasted nibs are! Finished chocolate should be ready next week.

We're trying an experiment: Cocoa-Nib Brittle! This is similar to a buttery peanut brittle made with cocoa nibs instead of peanuts. We made our first small today with our confectionery friends at the C-Shop. This first batch will be available to some of our retail partners to see how it goes. If the response is favorable we'll ramp up more production.
