This Dominican Republic cocoa starts with a strong earthy, tobacco flavor when un-conched. Then, when a subtle conche is applied the tobacco notes diminish and a dried fruit sensation emerges. Some have described the fruitiness as plum, grapes or red fruit. Regardless of what its labeled, this is one of our more interesting recipes.
recipe - 71% cocoa, mild roast, subtle conche, single origin cacao from Dominican Republic. Ingredients: organic cocoa nibs, cane sugar, cocoa butter.
